70 Calorie Single Serve Microwave Cake

Over the last 3 years of blogging I've had very few posts go 'viral.' Back in the early days of this site I posted a badly photographed (we all start somewhere) recipe for a single serve microwave cookie. I still get about 50 visitors a day to the site just from Pinterest because of that post! Just one pin has been repinned 500 times. It's crazy!

Microwave Cake

I thought it was time to revisit the recipe and make a few tiny changes:

  • I'm not calling it a cookie as it's definitely more cake like
  • I'm using stevia this time instead of brown sugar



  • 2 TB Blue Diamond Unsweetened Vanilla Almond Milk
  • 2 TB Pb2
  • 3 packets stevia
  • 1 TB Egg Whites
  • 1/4 tsp baking powder
  • 1 tsp cocoa powder

Directions: Mix all dry ingredients first. Whisk in wet ingredients. Microwave for 2 minutes. Devour.

Best eaten right away while still warm. You may have to play around with cooking time a bit. I like mine gooey and moist. So freaking delicious. You can whip up some extra PB2 to slather on top. IMG_8393

It's not overly sweet, so don't expect it to taste like some bakery chocolate cake (hello, it's 70 calories!) I find it hits the spot late at night when I'm craving something sweet but (1) don't want a ton of sugar and (2) don't want to eat a ton of empty calories. This little beauty packs in 5 grams of protein!
