Black Bean Brownie Success

It's such a hard life I have sitting around the house trying various brownie recipes. I'm not sure if I'm happy that this recipe turned out so well or not.

On one hand - I have a pan full of delicious and somewhat healthy brownies.

On the other hand - I have a pan full of delicious and somewhat healthy brownies.

I took my inspiration from a recipe on Allrecipes here but made so many modifications I'll just list the ingredients I used:

  • 1 15 oz. can black beans (rinsed VERY well)
  • 3 eggs
  • 1/2 cup applesauce
  • 1/2 cup sugar
  • 5 packets truvia
  • 1/4 cup cocoa
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1.5 tsp vanilla extract
  • 1 tbsp. chocolate chips (sprinkle on the batter once you've poured it into the pan)
  • Mixed all ingredients in the blender then poured into a greased 8x8 inch baking pan and baked at 350 degrees for 25-30 minutes.

As made above if you cut the brownies into 12 servings they come in at approximately 90 calories per brownie.

They were much lighter and fluffier than the previous recipe and I couldn't taste the black beans at all. I'm anxious to see how they taste once they've come to room temperature. The real test will be to see what Matt thinks about them.
