Things that I am a fan of when it comes to my food; quick, healthy & inexpensive. I've been craving more warm and hearty dishes now that temps are finally cooling off here in Alabama and cheesy potatoes sounded perfect. Cooking and baking are so central to celebrating this time of year! I'm having so much fun creating new Holiday traditions with Travis since this will be our first Christmas together. He's so busy with work we haven't had time to do a lot yet, but we are hoping to go look at Christmas lights this weekend and watch a few Holiday movies.
I picked some Betty Crocker™ potatoes this week and started toying around with ideas on how to spruce them up a bit. Most potato side dish recipes are pretty basic. I wanted to make something that could be a fun, vegetarian-friendly, addition to any Holiday gathering. By adding some veggies and protein to this mix it could be a complete meal on it's own (and a really, really tasty one at that.)
- Two boxes of Betty Crocker™ Parmesan and Asiago ($.50/2 box coupon!)
- 1 cup frozen peas
- 4 oz. of tempeh
Directions: Make the Betty Crocker™ potatoes as directed on the box. I used almond milk and only 1 Tb of butter instead of the directed 4 Tb (for two boxes) and it turned out just fine! Chop up tempeh and add to the potatoes to cook. When the potatoes have about 5 minutes left add in the peas.
How easy is that? This is one of those recipes that I ate about 1/3 of while it was cooking and immediately after. SO GOOD. Plus with the added tempeh and peas there's about 25 grams of protein in the whole dish.
