Mom's Carrot Salad with Raisins, Greek Yogurt & Pineapple

Mom calls this her 'apocalyptic carrot salad.' I think the title is justifiable. If I had to pick one thing to eat before the world ends this might be it (or angel food cake depending on that time of the month.)

Denise's Apocalyptic Carrot Salad


- 1 pound carrots (Mom recommends organic)

- 1/3 cup raisins

- 1 5.3 oz container of Nonfat Greek Yogurt

- 1/3 cup diced fresh or canned pineapple

- 1/4 cup mayo (I used light)

- 3 T sugar (I used Truvia)

- 1 T lemon juice

- 1/2 tsp Salt

Directions: Shred the carrots. Add raisins and pineapple. Whisk together the rest of the ingredients, pour over and let chill in the refrigerator for a few hours before serving.

I made some Sunday night and have had 1/2 c. with lunch every day this week. The pineapple + yogurt mix is pure happiness and the carrots totally balance out the high sugar of the other ingredients ;)

Does anyone have a favorite carrot salad recipe they'd like to share? I'm officially an addict!
