Plan With Me: Carb Cycling Meal Plan + Food Prep


I've said it a hundred times but I really think Sunday is my favorite day of the week. It is my clean slate. A day to relax, but also get a head start on the week ahead. We always get groceries on Saturday so I spend some time food prepping on Sunday, as well as cleaning as much as I can. I love starting Monday off with a clean house and lots of delicious food!FullSizeRender (6)

This weekend I made applesauce for the first time and it was so much easier than I thought it would be! I'm not sure why I anticipated it being some lengthy or involved process. Just peel the apples, throw them in a pot of water, let it boil for 10 minutes, and puree in a blender.

This was the first time we fed babe with a spoon and I definitely appreciated how much less mess there was! I still prefer baby led weaning as I've already noticed a huge improvement in his fine motor skills from spending so much time trying to pick up pieces of food and put them in his mouth. IMG_8408I'm trying out a few recipes this week from the Oh She Glows cookbook.

Breakfast: Eggs with jalapeno tofu or peanut butter oatmeal

Lunch: Chickpea egg salad or Indian lentil cauliflower soup

Dinner: Protein smoothie

Snacks: Nuts, fruit, crackers with guacamole, hard boiled eggs.

Premier Protein sent me some of their newest flavor to try out. I had one yesterday while getting ready to go out to eat. I always make better menu choices when I'm not starving when I sit down to order!

You guys -- I didn't think I would love it (despite the fact that I eat 1-2 bananas every day) but it's giving Strawberries & Cream a run for my favorite flavor. The 'cream' flavor in this Bananas & Cream is just so rich and creamy. I just got them a few days ago and only have one left that I'll now have to hoard for a special occasion.

IMG_8389Aside from my food prepping and cleaning I think we may try to take baby to an Easter event this afternoon. I'm also finalizing the first week of workouts for my online boot camp starting next Monday!
