Happy Sunday! I'm pretty sure I blinked Saturday morning and the entire day went by. We took baby boy to see the Easter Bunny at the mall, and he wasn't sure what to make of the whole 'stranger in a fuzzy suit' situation. Our afternoon was spent grocery shopping as we had a $40 off $200 purchase coupon (I love Fred Meyer) so I was tallying things up as we put them in the cart and we stocked up on things we go through often.
After trying it for the first time on Friday I had to pick up another container of Toby's jalapeno dip. Friday was a feast day and my heart was set on some sort of Mexican dip. I was looking at the vegan cheese section and came across this dip and figured I'd give it a try.
I heated up a can of beans, tossed in some green onions and 1/2 a cup of the dip, and literally ate the entire thing in one sitting. I figured I'd just eat about half and save the rest. Nope. It's was spectacular. My body legit needed the carbs. I completed one of the hardest workouts of my life that morning and my muscles needed to be fed! I didn't even feel all gross and bloated like I normally would after. It probably helps that I used the tofu dip in place of the cup of cheese I'd normally put in there. My meals for the week will be:
Breakfast: peanut butter oatmeal or scrambled eggs w/jalapeno tofu
Lunch: salad or cauliflower fried rice w/tofu
Dinner: protein smoothie
Snacks: sweet potato, nuts, peanut butter or fruit
Today we are hoping to go to an ice park before the sculptures start to melt. It's going to be in the 40's here next week! I can't wait for the snow to melt, but I also hoped it would be on the ground still when my parents are here to visit May 1st. I definitely miss running outside and look forward to when I can take the baby outside for walks to get some fresh air.
