Plan With Me: Meal Prep Ideas + May Designs Planner

Happy Sunday! I say this every week but I mean it every week; Sunday is my absolute favorite day. I hope you all are having a wonderful weekend. We've been having a lot of fun and are planning to go check out the local library and Pioneer Park later today. This week I'm planning in my May Designs book again. Sunday will mark the end of the 6 week food cycling program I've been doing with my trainer so I'll be celebrating with some pizza and chocolate! I've been gluten free and 99% dairy free for 6 weeks so I'm looking forward to a little fun.

I'll be hopping right back into carb cycling with the ladies who are doing my online boot camp. I can't wait to continue utilizing this approach to diet and exercise as it has truly made me feel so energetic and has helped me lean out significantly since having the baby. FullSizeRender (2)

Here is my grocery haul for the week. IMG_1792

I've been avoiding added sugars aside from a small squirt of honey in my protein smoothies at night but I grabbed some brown rice syrup to try the Glo Bars from the Oh She Glows cookbook. I'm so glad my Mom gifted me that cookbook for Easter as it's by far the best cookbook I own. The bars are so delicious Travis and I each had two yesterday. They have almond butter and pumpkin seeds in them which Travis claims to hate (her recipe calls for sunflower but I already had pumpkin seeds at home.) I didn't tell him what was in them and he ate the right up.IMG_1797

What I love most is how cost effective they are. Even with all the 'expensive' ingredients like chia seeds and hemp hearts it still cost about $5 to make the batch of 12. Before I bought the ingredients I looked to see what the cost would be to buy pre-made organic granola bars and it was $5 for 6. Mine aren't totally organic but they are missing the usual preservatives and additives in processed food. I can't wait to make them again next weekend and throw in some fun additions like dried fruit or chopped walnuts. IMG_1799

I'm doing a bit of food prep today to get a head start on the week. I'm hard boiling a dozen eggs, roasting sweet potato fries for the baby, and making the cauliflower lentil soup from Oh She Glows that I never got around to making last week.

Breakfast: Zoats or Scrambled Eggs

Lunch: Chickpea Salad with GF Crackers, Cauliflower Lentil Soup OR Tofu + Veggies

Dinner: Protein Smoothie

Snacks: Glo Bars, Fruit, Nuts and Peanut Butter

I'm trying Zoats for the first time this week. It's basically adding 1/2 cup of shredded zucchini to oatmeal to bulk it up for virtually zero calories. I'll also add some egg whites similar to my egg white oatmeal.

Ha. Travis just went back to get another granola bar. I wonder if I should tell him what's in them?

Nah.
