Plan With Me: Workouts + Meal Prep for the Week


How is it Sunday already?! With only seeing Travis 2-3 hours a day during the week the weekends go by way too fast now. I tried to get most of my cleaning and food prep done yesterday so I could relax and enjoy today! I had so much fun decorating my planner this week! I used some of the Valentines washi from Target and this gorgeous sticker set from PopsDesignStudio on Etsy.


I like showing it off before I fill it up with my chicken scratches. There is a lot going on this week. Baby's 4 month appointment, I have another counseling appointment, we are taking Salem to the vet to get a treatment plan made up for some dental work, and I'm getting my hair cut. I'm having wild fantasies of cutting it all off.


This week starts the first week of my 5k training plan! I'm hoping to sub 30 minutes at a race in April and am giving myself 12 weeks to get ready for it.

Monday: Upper Body + Abs

Tuesday: 5k at easy pace

Wednesday: rest

Thursday: 4x400 intervals

Friday: Barre

Saturday: 4 miles

Sunday: Leg day

Meals this week will be:

Breakfast: slow cooker oatmeal

Lunch: Greek salad or burrito bowl

Dinner: Protein smoothie

Snacks: Toddler muffins, hard boiled eggs, nuts and cheese

Little man keeps grabbing for everything we are eating, and throwing quite the little tantrum when he can't have any, so every time I eat now I think "would I want him having some of it?"

Well, almost every time. I definitely had some s'mores gelato and a 3 Muskateers yesterday that I wouldn't share with anyone!

I was in the mood to do some baking and looked for a healthy muffin recipe. I hate it when I google 'healthy XXX dessert' and I get recipes that have 1 cup of sugar and 2 sticks of butter in them. Ummm. No. I came across this "triple hitter toddler muffin' and had most of the ingredients already so figured I'd give it a whirl. IMG_1431It definitely tastes like there is a cup of carrots and a cup of zucchini in there. They aren't bad, but they certainly taste healthy! They are probably the most dense muffins I've ever made. They are very low sugar, and something I'd feel comfortable letting the babe eat. Travis wouldn't even try one, but I had three last night so there's that. I've never met a carb I didn't like.
