I took this photo last week while I was preparing one of my new favorite dishes - Quinoa with Black Beans. The original recipe can be found on Allrecipes.com here. Quinoa is something I started eating more of while Matt and I were in New York City in March. I was somewhat familiar with it prior to that trip since my Father has Celiac's disease (gluten allergy) and started eating Quinoa after his diagnosis. Quinoa is an amazing source of protein and has been consumed for thousands of years. It has a subtle nutty flavor to it and resembles a cross between couscous and rice.
The Quinoa and Black Bean recipe is so satisfying and very low fat. I modify the original recipe slightly by adding only one can of black beans (versus two). As modified each cup has only 220 calories and 9 grams of protein! If you've ever been interested in trying Quinoa before I definitely suggest starting with this recipe. The way I make it yields approximately 5 cups and it reheats perfectly. If I had a pan big enough I would double the recipe next time I make it as Matt and I could eat it for lunch daily!
