Taco Cups!

Arriba! I love making Mexican food just because Matt turns into a comical Mexican character the entire time we're cooking & eating.

Lots of finger tambourine gestures and "Aye aye aye aye!"

DIY Mexican has been a staple in our house recently because it allows us to customize our plates. I tend to go lower on all the cheese & beans while Matt can pile his tostadas/tacos/burritos as much as humanly possible.

We started by making the wonton cups following the recipe here.

I assembled all the fixings: taco seasoned faux beef, refried beans heated up with a splash of hot sauce, green onions, sour cream and shredded cheese.

There may have been a margarita involved. {If you haven't tried Crystal Light's mocktails yet do so immediately}

Pile all ingredients into wonton cups (we made our cups ahead of time and they were perfectly delicious cold!)

Best part of Mexican? Leftovers!
