Tarts + Crepes

Matt and I are usually pretty low-key in our culinary tastes.  Since we have been out of town this month and I've been generally under the weather with back issues and now a week-long cold we haven't been cooking as much as normal. I had an urge to try a few new recipes out this weekend so we started Saturday night with sun-dried tomato & goat cheese tarts.

I actually found the recipe while browsing this cookbook I bought on the clearance rack at Barnes and Noble years ago.

I've never made tarts before, or used frozen pastry sheets, so I was nervous that they would be very temperamental. We started by cutting up the zucchini and tomatoes and frying the zucchini in a little olive oil and a lot of garlic.

Next, we had to cut out 3.5 inch circles from the pastry sheet. Of course I didn't have a cutter that size so we improvised!

We assembled the tarts with the zucchini mix on the bottom, sun-dried tomatoes next and a pinch of goat cheese to top them off.

After a quick 10ish minutes in the oven they were ready! We *devoured* them. I had 2.5 and Matt had .... 7 or 8. Growing boys!

I made a light salad to go with it - walnuts, pears and a bit of the goat cheese reserved from the tart recipe.

Before we even finished dinner we were talking about how often we would make this again. If anyone has any vegetarian tart recipes they love please pass them along! We have one more pastry sheet in the freezer to use and I'd love to try another new recipe with it (although my feelings wouldn't be hurt if we just made these again).

After dinner we made our desserts. Matt has been bring up crepes for months now but we never got around to picking some up from the store. Since we were feeling so fancy with our tart dinner on the agenda we finally bought some at Publix that morning to fill with fruit for a healthy dessert. These photos are of Matt's which was significantly more filled than mine!

Saturday we planned to go for a run but I made it about 1.5 miles in before my back started tightening up again and my lungs hurt from the cold I've been struggling with. We ended up run/walking 3.5 miles in 50 minutes. Not bad, but I'm ready to finally feel normal again. Matt thinks I have unrealistic expectations about my health since I expect to bounce back from a cold in 1-2 days. It's just so frustrating for me when I feel like I do everything right in regards to diet and exercise yet I still suffer from week-long colds that just won't go away!

Especially when that week is part of the 2 I have off between the Summer and Fall terms.

I keep trying to remind myself that (1) at least I can walk standing upright without pain now and (2) FALL is right around the corner!
