My life felt like a vacation this weekend.
I didn't have to work, cook, or do much of anything that resembled my usual routine. Saturday night the bf made me dinner. We started with a caprese salad with homemade raspberry vinaigrette glaze. Next up was this bombass fruit & nut salad. He used olive oil and a bit of fresh lemon juice as the dressing which I wouldn't thought of combining with all the sweet flavors but it worked perfectly.
It also got us to talking about sour things, like warhead candy. I wasn't sure if I'd ever had it before so before long we were in the car on a mission to find some. Four stores later and we hit the jackpot.
I wish I could have captured on video the moment bf decided to put 5 in his mouth at once.
Sunday morning I woke up early to get in my last training run before next weekends half. I'm not going to run the half for time so I'm not taking it to seriously, but I knew my legs needed some decent mileage since the most I've done since the marathon was 10.
After the run my personal chef whipped up this for breakfast: eggs baked in avocado. I need to work on getting more healthy fats into my diet and dishes like this are the jackpot. We spent the afternoon at one of my favorite Pensacola landmarks - Fort Pickens. Even though I've been to the fort a few times as an adult I hadn't been down these teeny tiny halls since I was a kid. As exciting as it was to wander down them I was also slightly traumatized. There was zero light in them and when I was coming out with my back exposed to who-knows-what-that-creeps-back-there I started to get genuinely uncomfortable. But, in a totally fun way still. I love being scared, in moderation, and with someone around to protect me!
The best part of the afternoon came when we hiked a nearby trail for a bit. We walked along the beach to get back and came across a man-o-war and this ridiculous dinosaur creature technically referred to as a horseshoe crab. I also picked up a few feathers for my collection, and came across this adorable mini carved heart that said "forever, okay?' on one side and initials on the other.
Best souvenir ever.
