The only way this weekend could have been any better was if (1) it didn't have to end and (2) I won the lottery. Saturday morning I had a pretty good 8 mile long run. Average pace was just shy of 10:30 and the humidity didn't feel like it was completely suffocating me. I'm sure knowing I had lunch plans with my family helped motivate me to get it done. We met up for an early Father's Day celebration at Jaco's. The restaurant is downtown, right on the water, and always delicious.
After lunch it was only a matter of time before someone suggested we get frozen yogurt so that totally happened. I actually tried to control myself with the toppings this time. Yes, this is what 'controlling myself' looks like. Sunday morning I attempted a hike at UWF but the bugs/flies there were horror movie bad. I didn't even make it to the actual trail head before they were attacking me like some Hitchcock film so mini golf became a very fun plan B. Just for the record, so it's 100% official, I won the game. Not by a lot, but I still won.
That night I had dinner from one of the food trucks downtown. I ordered some nacho's since they were one of the few vegetarian friendly meals on the menu and when this came out my first thought was, "holy crap that's a lot of food." For about 30 seconds I didn't think I'd be able to finish it all, but I did. I was on the verge of uncomfortable full on the way home but come onnnnn ... how can you say no to queso? When I got home that night it was the perfect time to food prep! I picked out meals this week that were quick and I could make without recipes since I knew I was going to have a full weekend and be low on time. Cauliflower chickpea curry + steamed veggies with faux chicken for my favorite Asian sesame salad. I hope you all were able to spend some time with your Pop's this weekend. I always love seeing my family and am completely unbiased when I say I have the world's greatest Dad. After a bit of a stressful week last week I'm recharged and ready to kick this weeks ass. I've got a mile long to-do list, lots of fun workouts on the agenda, and I may even have some good news to share in a few days.
