Happy Monday! Or, happy 5 days until the weekend! I hope you all had a relaxing and fun weekend and celebrated with your Mom's if that was possible. My parents came over to Pensacola on Saturday to celebrate Mothers Day early and before they got here I went for a long run at my new goal LR pace. I did stop twice on the run around miles 5 and 8. It was 91% humidity out and my HR was pretty high the entire run. It was a struggle to try and stay under 11 minutes at some points, but overall I'm happy with my pace. It's that part of the year where I'll be adding electrolyte supplements to my water and taking an Endurolyte for any run over 8 miles.
For Mother's Day I picked up two small bouquets from Publix to make this arrangement, a cute quote plaque to put on her desk at work, and I gave her a book from my vintage collection. She's kind of obsessed with everything 1940's and is redecorating her room in that period. They came out here to visit some antique shops in Pensacola. We actually have a lot of amazing stores here! How depressing is it when you start seeing toys from your childhood in antique stores? If this Jessie doll would have come with a mini bottle of no-doz I would have had to buy her. For lunch we went to one of our favorite spots - Roly Poly. I really need to get all the stuff to make this salad at home as it is ridiculously good. Dried cranberries, walnuts, avocado, sundried tomatoes, croutons, mushrooms and blue cheese. Yum!I had to balance out all that healthy crap with some frozen yogurt. I probably go out for this once every 2-3 months so when it happens - it happens big. I went with three yogurt flavors; white chocolate mousse, chocolate, and cake batter. Toppings were m-n-m's, yellow cake, peanut butter cup crumbles, kit kat crumbles, and cookie dough balls. Bam.After the parents left I ate sushi at home for dinner and watched one of the movies I picked up from the library this week - Hope Floats. I was kind of disappointed in the movie. It was cute, but definitely not great. The sushi made up for it! I walked into the living room Saturday night and saw Salem posed like this. I asked people on Twitter for captions and my favorite was, "paint me like one of your French girls." Sunday morning I woke up and went straight to work. My classes start today and I had a few things left to do to get my online class ready. I worked from about 7-9 a.m. before finishing up and getting a workout in before the day got to late. If I don't exercise in the morning it just doesn't happen. After that I went to Publix to get groceries for the week. I've been buying my groceries on Tuesday, but after reading It Starts With Food last week I'm all gung-ho about trying to eat clean, more diverse fruits and vegetables, and more healthy fats. I'm planning on roasting all the veggies in coconut oil, hard boiling the eggs, and I had to pick up some more protein powder for my ice cream!
As much as I'm not ready for my semester break to be over I'm excited to get back to work. It's so hard for me to stay motivated to work when I'm not actually going on campus or teaching. I'm so all or nothing in my life. What are you looking forward to this week? When is the last time you've done a 'diet overhaul'?
