Worlds Best Marinated BBQ Vegetable Recipe

I am not exaggerating; this super simple marinade recipe makes for the worlds best BBQ vegetables. My mom started using it a few years ago, and I'd request them every time I went home to visit. After Travis and I bought a grill a few weeks ago it was the first thing I made! I'm not sure where Mom got the recipe from, but I'm guessing it was in the family since the only title she has for it is:

"Aunt Margie's Teriyaki Marinade"

  • 1/2 cup low sodium soy sauce
  • 1/3 cup olive oil
  • 1 can of pineapple slices (save the juice!)
  • 2 T. sugar
  • 1 tsp. ground ginger
  • 1-2 minced garlic clovesIMG_9011

Slice up the pineapple slices into quarters, and add them and the pineapple juice to a big bowl (with lid) with the rest of the ingredients. Add whatever other vegetables to the marinade that you'd like. I prefer 1 big can of whole potatoes, a package of mushrooms, and 1/2 sweet onion. Bell peppers also work great! Let the veggies sit in the marinade in the fridge for at least 2 hours (half a day is preferable.)

When it's time to BBQ either put the veggies on skewers, or get one of them fancy roasting baskets to just throw them into.

When Travis and I got our grill we weren't sure how often we'd actually use it so we went with a pretty basic model. We've been using it 2-3 times a month so I know it's only a (short) matter of time before we upgrade. As you can see we hardly have room on ours for some veggies and his little bit of meat!
