Growing up one of my favorite home-cooked meals was Macaroni and Cheese. I loved it so much it is always the first item I request Mom make when I go home to visit my parents. I’ve made it a few times myself but things never taste quite as good as Moms. Also, single me couldn’t justify having an entire baking dish full of Macaroni just sitting around the house.
Luckily, I have a perpetually hungry boyfriend around now who is happy to help me devour any sort of cheesy pasta dish. I wanted to change up my usual recipe a bit and thought broccoli would be the perfect addition. It has to be my favorite vegetable and I wanted something to bulk up the volume of the dish without adding a ton of calories. After some online digging I decided to use the Skinny Baked Broccoli Macaroni and Cheese recipe from SkinnyTaste.com. I followed the recipe completely and it came out phe-nom-enal. So good that Matt is looking forward to eating the leftovers 3 days in a row. The picture doesn’t do it justice at all but there are more mouth-watering photos of the dish on the recipe link above.
