Even though I’m not 100% Gluten Free or Vegan I try my best to limit dairy products and gluten as I find my digestive system has improved significantly since doing so a few months ago. I’ve been struggling a bit with ensuring I’m eating enough carbohydrates now that I’m marathon training so it took me about 3 hours to come up with this week’s menu on Sunday. I first craved Mexican, and planned to make my Mom’s blow-your-face-off-good beans and cornbread. As I searched around online I came across this idea for corndog muffins and it was love at first sight.
One huge problem for GF baking is most recipes call for a long list of items that you don’t have on hand unless your truly GF (as I’m not.) So, I decided to take a shortcut and doctor up some premade mix. I went with Bob’s Red Mill after reading positive reviews on Amazon.
Corndog Muffins (Gluten Free & Vegan)
– 1 package Bob’s Red Mill Cornbread Mix
– 3 Lightlife Smart Dogs (cut into small slices)
– 2 Cups unsweetened Almond Milk
– 2 Flax seed eggs (Mix 2 T Flax with 6 T water and sit in fridge for one hour before using)
– 2 T Coconut Oil (or other oil of choice)
– 2 T Sugar
Directions: Preheat oven to 375 degrees & line muffin pan with liners. Mix all ingredients together in a large mixing bowl until smooth. Drop into muffin liners (I filled mine to the top and they over-flowed a bit!) Will make approximately 16 muffins (I ended up making 10 plus a small batch in a bread pan.) Bake for approximately 25 minutes.
Each muffin has about 150 calories and 3 grams of protein. The only thing I was disappointed with was not having mustard at home to eat them with – it would have been so perfect! I know a recipe is worth sharing on here when I can’t open the fridge without eating some of it. I actually ate dinner last night, opened the fridge for some water, and ended up eating half the loaf because I just couldn’t resist it.
These would also be great with a little jalapeno peppers cut up and added to the batter before baking. You could also shove popsicle sticks in them and make corndog muffin pops. Hey – I could start the next cake pop trend.
