Yes, this is happening. Just in time for Valentines!
A few months ago I became intrigued by the concept of single-serve desserts that you could make in the microwave. Problem was I couldn’t find any that really tasted like dessert. The recipes I tried weren’t bad, per say, but it always felt like something wasn’t quite right.
So I tweaked ingredients, added new one’s, altered amounts in other recipes and I’ve finally created what I believe to be a pretty damn good imitation of ‘real’ chocolate cake.
Deliciously Decadent 125 Calorie Microwave Chocolate Cake
Ingredients:
- 2 T. Flour
- 1.5 T Cocoa Powder
- 2 Packs NuNaturals Stevia or other sweetener of choice
- 1/4 tsp Baking Soda
- Pinch of Salt
- 3 T. Almond Milk
- 1 T. Egg Beaters
- 1 T. Applesauce (I used publix brand organic)
- 1/8 tsp. Vanilla
- Hershey Kiss
Directions:
1. Combine the first 5 ingredients in a bowl and mix well (all the dry stuff)
2. Combine the next 4 ingredients in a cup (all the wet stuff)
3. Spray another small bowl with cooking spray and pour the wet mix in. Add the dry mix and combine until just mixed (don’t over mix!) Don’t eat all the batter either.
4. Microwave for 30 seconds. While it’s in the microwave chop up your Hershey Kiss. Once the microwave is done, take the bowl out and add the chips. You could just add them to the mix before but they will likely all sink to the bottom.
5. Put back in to the microwave for 30 more seconds.
6. Let cool for a minute or so (it will set up a bit more after you take it out of the microwave). Enjoy! You can eat it straight out of the bowl or get fancy and put it on a plate.
It’s *so* important that you follow the directions as I have laid out. I tried many times to just throw all the wet and dry ingredients in a bowl at once and the texture always came out funny. I also wouldn’t recommend microwaving it in a mug as it won’t cook all the way through. Could you do it without the Hershey Kiss? Of course, but that little bit of chocolate is what really makes it taste authentic. You could substitute the kiss with 1 T. of chocolate chips or drizzle some chocolate syrup on top!
As for the taste, I don’t want you to expect a bakery quality cake, but I haven’t been able to eat this yet with out dropping my fork after the first bite and exclaiming “omg this is incredible”. I have tried almost every popular single serve microwave dessert and this one really is the best I’ve had. I love my desserts moist and gooey and that’s exactly what this recipe is!

I tried to make sure to use ingredients that were easy to find. A lot of single serve recipes I came across called for multiple items I’d never bought before and would likely never use again!

That is almost the same recipe I use – the one I make is from Chocolate Covered Katie. I always add some dark chocolate chips and a dab of peanut butter. I make it at least once a week!
Her recipes were definitely some of the best I tried! I think she doesn’t use the egg which I found to really help the consistency of the cake.
One serving desserts are so dangerous! This recipe is no different. So dangerous that I am tempted to have it as a late breakfast (it’s 10am here) :P
You should totally have it as a late breakfast! Or snack, or part of your lunch. It works anytime :)

Lol, I know food doesn’t taste nearly as good being cooking in the microwave as the oven, but sometimes ain’t nobody got time for the oven!
This looks delicious! I’ve tried microwave cake recipes before and they’re pretty good but not nearly as good as a real baked cake. I am going to try this, since it looks delicious and lower in calories! I admit..I’m a chocolate lover too.

I didn’t want to say it – but I was totally trying to copy Vitatops! I finally had to quit buying them a few weeks ago because my one-a-day habit was costing me over $30 a month!

As a single girl I can never justify baking anything …. I can’t control myself around an entire cake or a dozen cupcakes so this is perfect!

How is this possible? I just made this and measured out all ingredients and worked out calories (accurately by scanning into my fitness pal) and the flour alone was 103 cal…
What kind of flour are you using?
Publix brand all-purpose flour. The nutritional information on the side list 1/4 cup = 110 calories. Since the recipe only calls for 2 Tablespoons (or 1/8 cup) that’s 55 calories for the flour.
Also, what did you think of the taste?
Hmm, I weighed mine out so that’s strange :/ maybe I did use too much flour, because I thought it did taste a bit flour-ish. Mine was 192 cal not inc the bit of Choc on top! So perhaps my tablespoons were too generous.

This cake is AMAZING. My sister and I are obsessed. Of course we top it with tons of whipped cream so it’s not as low cal haha but it’s still my favorite skinny dessert!
