Gruyere and Apple Grilled Cheese

I try not to think of food as a ‘reward’. It goes against everything I’ve learned as an Intuitive Eating Counselor and it’s just not psychologically healthy to always associate food with positive emotions.

However, sometimes, I feel justified in eating whatever-the-hell-I-want. Particularly if I’ve just completed a 10 mile hike.

Enter: Grilled Cheese Sandwiches.

While I don’t subscribe to any strict diet or regimen of eating I follow a few basic rules:

– Never drink calories

– Eat as many veggies as I can stand

– Avoid processed junk/fast food

– Keep carbs in check

The last one is the only one I struggle with since I am a total carb fanatic. Matt has the sweet tooth in the family but I can let a chocolate bar sit in my pantry for months without thinking twice about it. However, leave a bag of chips in the house and I’m done for. I try to avoid making pasta for dinner often since it’s another meal that I can easily overdose on without realizing it until it’s been 30 minutes since dinner ended and I’m unbuttoning the top button of my pants.

Don’t judge me. We’ve all been there.

Accordingly, grilled cheeses don’t make an appearance in our diet often. Between the bread and cheese calories can start to add up quick but I found this recipe on AllRecipes last week and knew it would quench the grilled cheese craving I’ve been having for months now. Plus, it’s got some apple slices in it so it’s totally healthy! Really it’s not to bad as far as calories go. We made ours using spray butter and about 1.5 ounces of cheese so they came to 350ish calories each.

We made one of our favorite steamed veggie side dishes to go with it (Recipe found here). However, I always add to much salt to the dish so we probably won’t eat the leftovers. We both weighed a pound more the next day just from excessive salt consumption! We limit our Sodium intake so our bodies definitely over-reacted to the slightly elevated salt levels in the food.

We had a ton of fun cooking together, as we always do. We put on some music and finally opened the bottle of wine we got in New Mexico last month! Matt looks psychotic here (love you honey!) and I sat and peeled carrots and sang jailhouse songs.

For the record that is not my box of Trix. It belongs to someone who shall remain nameless (but has a notorious sweet tooth).

Does anyone have any tips to deal with bloating from salt intake?
