PB2 is a powdered peanut butter that has 45 calories in 2 Tablespoons. Regular peanut butter is about 200 calories for the same serving. If you’ve been reading my blog for a while you’ve seen me mention it at least once a week. I’m a pretty hardcore peanut butter lover and I love indulging in the ‘real’ stuff but I also like to have PB2 on hand to use as a low-calorie substitute on a daily basis. I’m not exaggerating when I say I use it at least twice a day.
I order this two pack from Amazon about once every 2 weeks. Thank goodness for Amazon Prime! I shared a pic of my cookies on twitter last week and think I irritated a few people by saying they’d have to wait until today to get the recipe! #Sorrynotsorry
As for the taste, most people love it but some are disappointed when they expect it to taste just like peanut butter. The way it’s made is that the peanuts are pressed so all of the oil comes out of them (Hence the fat and extra calories!) What you do is add water to the powdered peanuts and stir it up and a few seconds later you have peanut butter. It’s like magic! Without the weird uncle and card tricks.
I’ve found that the chocolate PB2 is good enough to eat on its own. I make up a few tablespoons just to snack on almost every night after dinner. PB2 is also great in smoothies, as a sauce for vitatops, and in these incredible ‘I can’t believe these are healthy‘ oatmeal cookies! I came up with these after I realized all those ‘single girl’ cookie for one recipes just weren’t cutting it for me. I needed more than just one cookie at a time – but I also don’t need an entire batch sitting around my house either. This recipe is perfect since it makes 6 cookies and has only 220 calories in the entire recipe. So you can eat all 6. Like I do.
