Low Calorie Tomato and Mushroom Wrap

I warned you before I have an obsession with wraps. They are just so easy and versatile I will literally be doing the most random activity and a lightning bolt of inspiration will hit me for the ‘perfect’ new wrap to try. The idea for this one came to me while watching Roseanne. I’m not sure why. Don’t judge me.

I try to keep wraps I make for myself around 200-300 calories. I eat 5-6 times a day so I eat much smaller portions than what most would consider to be  ‘normal’ lunches or dinners. With the low-calorie restriction I have to be creative when making sandwiches/wraps as most of the calories will come from the bread alone. Luckily, I had some plum tomatoes that needed to be used up so I decided to try to see how many tomato slices I could humanly fit into one wrap.

I started with a wedge of Laughing Cow cheese and spread it over a Multi-grain wrap. I put down some spring mix and proceeded to jigsaw arrange as many slices of the tomato as possible without compromising the structural quality of the wrap. Technical, I know. I’m like the Frank Lloyd Wright of vegetables. I finished it off with a few mushrooms, some alfalfa sprouts and 1/2 tablespoon of light italian dressing. It was dee-lightful.
