Mom’s Orange, Walnut & Billy Goat Cheese Salad

Once again, the title is all Mom’s doing! We had this salad at Thanksgiving this year and just looking over the ingredients I knew before I had any that I would love it. Prediction was correct!

Mom’s Orange, Walnut & Billy Goat Cheese Salad


– 1 bag Spring Mix Salad

– 1/4 cup toasted walnuts

– 2 medium oranges, juice reserved

– 1 shallot cut into thin rings

– 3 ounces soft goat cheese

Dressing Ingredients:

– 2 T Olive Oil

– 2 T Balsamic Vinegar

– 1/4 tsp salt

– 1/8 tsp black pepper

– 1/8 tsp sugar

Directions: Toast walnuts on a baking pan in a preheated oven (350 F) for 5-6 minutes. Cut peels away from oranges. Then, holding over a bowl to catch their juices, segment oranges. In a large bowl combine salad mix, orange segments, and shallot rings. In a small bowl combine oil, vinegar, salt, pepper, sugar, and 2 T of the reserved orange juice. Whisk to combine, drizzle over salad and toss to coat. Add goat cheese and walnuts.

Dad’s tip for the goat cheese: Place it into the freezer for a bit and let it ‘firm up’ so you can grate it.

Mom’s tip: just cut it up the best you can. People like chunks of cheese.
