I’ve seen single serve microwave cake/cookie recipes around for years.
I may have looked into them extensively when I was living the single life. However, I never actually made one because the thought of being a few minutes away from chocolate cake whenever I wanted it seemed like a slippery slope.
Now that I’m confident my husband would pull me out of any chocolate-induced downward spiral I may catch myself in I’m 100% okay with making this recipe as often as I want/can/need.
Peanut Butter Cookie/Muffin for One (Created by StuftMama – Original Recipe Here)
- 2 Tb PB2
- 2 Tb Soy/Almond milk (I used unweetened almond)
- 1/2 Tb Brown Sugar
- 1 Tb Egg Substitute
- 1/4 tsp. baking powder
- 1/2 tsp. cocoa powder (optional, I’ve never made it without this though)
Directions: Mix well in bowl and microwave for 2-2:30 minutes. Voila!
I’m well aware the cookie isn’t very photogenic but things don’t have to be pretty to be sweet.
Maybe it’s got a great personality?
As made with the ingredients I used it comes in at a whopping 85ish calories. Meaning, I can eat one a day and hopefully start replacing my daily vitatop habit with these. My wallet would be eternally grateful.
