Stuffed Portobello Mushrooms

I am a sucker for mushrooms.

I despised them growing up but as an adult I’ve developed a fairly substantial love for the delicious fungi.

I especially like portobello’s because they are so ‘meaty’ my carnivirous boyfriend doesn’t mind having them as a main course for dinner. This past weekend we made some spectacular spinach and artichoke stuffed portobellos using a recipe from Nicole over at Prevention, RD. 

Not only were they just over 200 calories each but the leftovers tasted as good (if not better!) the next day. We will definitely be doubling the recipe the next time we make these (which will be as soon as we can find 8 portobellos at the grocery store). The salad in the photo was a cranberry and toasted almond and I served it with one of my favorite steamed veggie sides. Great, now I’m famished and it’s not even 9 a.m.
