I love making Mexican food just because Matt turns into a comical Mexican character the entire time we’re cooking & eating.
Lots of finger tambourine gestures and “Aye aye aye aye!”
DIY Mexican has been a staple in our house recently because it allows us to customize our plates. I tend to go lower on all the cheese & beans while Matt can pile his tostadas/tacos/burritos as much as humanly possible.
We started by making the wonton cups following the recipe here.
I assembled all the fixings: taco seasoned faux beef, refried beans heated up with a splash of hot sauce, green onions, sour cream and shredded cheese.
There may have been a margarita involved.
{If you haven’t tried Crystal Light’s mocktails yet do so immediately}
Pile all ingredients into wonton cups (we made our cups ahead of time and they were perfectly delicious cold!)
Best part of Mexican? Leftovers!





i LOVE homemade mexican food! i always feel so much better when i eat it at home v. going out. i tend to overdo the chips in restaurants and it ruins my whole meal! :)
Lol – endless chips + dip plus 500+ calorie Margaritas are very hard to resist when eating out!

Well from now on we’ll have to wear a sombrero! Maybe we should dress in theme every time we cook? Oh what amazing photos that would make :)
These look so tasty! They make a great appetizer for a party. Homemade is the way to go when it comes to taco shells!

Absolutely! The wonton wrappers are only 20 calories each so I justify eating a few of them :)
